Maria's Challenge - A week on slimming world - Day Two

Breakfast
 Day Two

Breakfast - Late start this morning due to late nights for the last 2 evenings. Decided to treat myself to a lie in as I normally get around 5 hours sleep per night. Less than 7 hours of sleep per night has been linked to obesity, so when the opportunity for a lie in arises I will take it. Not as good a lie in as it could have been as I was rudely awaken at 6:00 and then 7:30 by Ginny Minton (cat) who initially was going up and down the ladders in the en-suite and then got her self locked in the wardrobe! Anyway back to breakfast, I decided on a fruit salad made up of nectarine, donut peach, melon, blackberries, raspberries and strawberries (all speed), covered with raspberry quark (free), with an obligatory black coffee.

Lunch I was on a housework mission today. Hermione Minton (cat) was caught eating fluff out of the wool rug yesterday so hoovering was a priority and I just carried on from there, clearing out drawers and wardrobes, applying chemical left, right and centre. So I had worked up quite an appetite by lunch time. As there were turkey burgers left from yesterday I rustled up burger (0.5 syn), topped with 40g Cathedral Light (Healthy A), an egg (0.5 syns for 5 sprays of rape seed oil), chips cooked in the Actifry with fry light  (free), mushrooms (0.5 syns oil as before), pickles (free), spinach, tomato, beetroot and cucumber (all speed).
Washed down with some fresh water and followed with a black coffee and a Fibre One cake bar (4 syns).
Mid-afternoon I needed a sugar fix and had a banana (free)





Dinner

I made Chipotle Beef Cheeks (see below for the recipe) in the pressure cooker. I used a double quantity of a slimming world recipe for Pulled Chipotle Chicken so the whole sauce worked out at 12 syns and I got 6 portions so dinner worked out at 2 syns. The cheeks were served with cauliflower, Helda beans and broccoli (all speed foods) and more Actifry chips - I know - twice in a day - but they are quick, easy and because they are free I can do it!

Evening

Had another black coffee, coffee doesn't stop me from sleeping and my Healthy B - 2 Hi-Fi bars. A Slimming World product available to members which is something nice to have with a drink and provides you with some fibre too!




So in summary another successful day.

Healthy A - cheese
Healthy B - Hi-Fi bars
Syns -  6.5 (clawed back 8.5 of yesterday overspend!)

Also worth noting that I managed to fit in 15 different types of fruit and vegetables (types not servings although I definitely got my 5 a day!)


Chipotle Sauce (single portion 6 syns total)
partially taken from Slimming World magazine supplement "Saturday Night Specials"in association with Muller Lights

Mix together 4 tbsp tomato ketchup, 1 tbsp mustard powder, 1 tsp black treacle, 2 tbsp cider vinegar, 2 tsp sweet smoked paprika (I used hot smoked though), 2 tbsp chipotle sauce, 2 tbsp Worcester sauce.

You can use it as a sauce but I would heat it gently first, a marinade, I've used it for pulled chicken or slow roast gammon, the left overs I'm going to make bbq chicken I think. Quite versatile and swapping from sweet to hot paprika gives it a great kick.
