Maria's Challenge - A week on slimming world - Day Six



Day Six
Getting nervous now, don't want to fall at the last post and I'm feeling anxious that I need to see a result of some sort on Saturday morning or what will everyone think! Especially as I can't argue about whether I've stuck to plan or not - I really have. Yesterday I went to the supermarket on the way home, as I've mentioned before, this is a danger point for me and horror of horrors walking through the USA section, a new Peanut Butter chocolate bar had appeared, I picked it up, I examined it, it was in little sections and I had just about convinced myself that I would buy it and only eat one section per day, only 4 syns per section, there were 6 sections, who was I fooling I was going to get in the car and scoff the lot so fast I could almost pretend it never happened and then I thought of the blog and that if I did that I'd be too ashamed to write it and then it would all be wrong, so I put it back and gave myself a pat on the back! 

Breakfast

Was sort of organised this morning despite overlaying by 10 minutes, it could have been so much worse as I was dozing thinking it was an hour earlier than it really was and somehow I'd already turned off my alarm. I got myself together and had a large glass of water, before prepping a fruit salad and a pot of quark. I put some coffee yoghurt in a pot and grabbed a Hi-fi bar and then got some soup out of the freezer for lunch. 
Lots to ponder when I starting reading my e-mails, so I ate the nectarine and donut peach left on my desk from yesterday. About an hour later I had my fruit salad and raspberry quark, so a morning of free and speed food and no spending money in the canteen.

Lunch

Started off in a surreal way. As I went to organise my soup to go in the microwave there was something on the table, it was Lauren's name and my mobile phone number printed onto the surface of the table! After a few minutes confusion (everything was a bit Twin Peaks!) I realised that the lunch bag I took my lunch in yesterday was labelled up for when Lauren goes to club and I remember hovering for 5 minutes waiting for one of the staff to finish cleaning the table before putting my bag down. Horrified, I found a bottle of chemical cleaner and had a good scrub, but when I left it was still there!
I don't usually take Slimming World soups to work, they are frozen and take a bout 12 minutes to cook which is almost half of my break, but I'd let this one defrost over the morning so it was cooked in about 8 minutes. It not a very thick soup but it's really tasty with a bit of texture from some whole peas and the mint is not overpowering. Treated myself to a lunch time pudding of coffee yoghurt with the Hi-fi bar crumbled in.

Dinner

Worked an hour and a half late and then had the longer than usual journey to pick Lauren up from club. Had to pop to the chemist on the way and as I was starving treated myself to a bag of nostalgic Tomato Snaps (5 syns).

We got home at about half past five and I set about making  my own recipe Slimming World Lasagne, 1.5 syns and 1/2 a healthy A per portion, serves 4.

I pimped it up today and used up lots of bits of veg that were waiting in the fridge most likely to be thrown away as individually not enough of anything to make a meal. The basic ragu (and no measurements here as everything is free or speed you can just use whatever quantities you have/want). I used fry light to fry my ingredients but you could use spray oil which ranges from 1/2 syn for 5 sprays for shops own brands to 7 sprays for 1/2 syn for Filippo Berio. I fry onion and garlic until soft, add some 5% beef mince and brown it, add basil, celery salt, mixed herbs, salt and pepper, a glug of alcohol free red wine, half a tube of tomato puree, a tin of chopped tomatoes, a carton of passata, a dash of Worcestershire sauce, some chopped spinach and sliced mushrooms and leave to simmer until thick but still juicy. Today though I also added a chopped pepper and carrot and some sliced cavolo negro (black kale) from mum and dad's garden. Rather than using pasta I fried (in Fry Light) some slices of aubergine and courgette and layered up the lasagne - mince, aubergine, mince, courgette. For the topping I cooked a Bisto frozen Cauliflower Cheese in the microwave and then tip it into a jug and blitz it to a sauce. I spreas it over the top of the lasagne and then topped it with 80g of Cathedral Lighter cheddar.
Finally bake in the oven for about 30 minutes until golden and bubbling.
We ate it with some microwave veg as all the fresh veg has been used up and with the last couple of potatoes I made some free chips in the Actifry.
Best meal of the week.



Had my nightly coffee with a Nature Valley popcorn bar (4 syns) and my remaining Hi-Fi bar to make up my Healthy B.

I nearly didn't get this out tonight, got side tracked looking at photos of my holidays last year, has made me realise I have lots of things to share from last year, so you never know I might hit that target of 52 blogs and 52 cinema films, but sadly don't think I'm going to manage 52 books read!
