M & M Double Chocolate Cookie Cake

Saturday was gymnastics morning, Tony's fishing day and Film Night, however for the time being film night has been replaced with Strictly Come Dancing Night. Fishing day always means lunch out for the girls and it was Laurens choice, I was all geared up for a Happy Meal but she decided on "Ben Tuckers Fried Chicken...no Chicken Fried Tuck"...luckily mums nearly always know what their children are talking about and we ended up at the Colonel's table, eating popcorn chicken and discussing what to get for Film Night. Finally we decided on a baking session and a stop off at the Co-op gave us a bag of delights to work with.
All went to pot when Lauren ended up with a friend round to play, they seemed quite eager to help with the baking until I asked them to wash their hands and then they made their excuses and sloped off to watch How to Train Your Dragon, I later discovered that Lauren's friend didn't like the film and so they played How To Trash Your Bedroom instead - kids!!
So that left me flying solo with the baking, I couldn't be bothered with all the faff of making cup cakes without an assistant, so I googled my list of ingredients and on a website called cookie madness I found a recipe that I could work with, although it was in a mix of cups and ounces which was a bit kooky and I wanted to make my cake a double chocolate one.
After a few tears and some tidying up, Lauren soon regained her interest, especially when she saw it come out of the oven, smelling of rich chocolate and looking smart in it's many colours. It didn't disappoint on eating either it was biscuity and crunchy on the outside, soft and gooey on the inside, with lovely, melty, chocolate surprises within and crisp and crunchy M&Ms on top. Perfect with a rich cup of espresso (or milk if you're only 6), but it definitely needed a fork!

M & M Double Chocolate Cookie Cake
2.5 cups of plain flour (I weighed it as 11oz / 300g) If you want to make single chocolate keep it as this, if you want to  make it double chocolate then replace about 25g or a couple of tablespoons of the flour with some good quality cocoa powder.
1/2 teaspoon of bicarbonate of soda
8 oz / 225g salted butter (if you use unsalted butter you will need to add some salt)
1 cup light brown sugar (I weighed it as 6oz / 170g)
2 large eggs
2 tsp vanilla extract (I used a little less than this)
1 bag of chocolate chips - milk, plain or white or a mixture about 4oz / 100g
A normal 1 person sized bag of M & M's

Heat your oven to 150C/GM2/300F.

Leave to cool!
Line a 12" pizza tin if you have one. I didn't and I didn't have any foil to make one and then line it, so I found my biggest roasting tin, greased the whole bottom, then cut a 12" circle of greaseproof paper, stuck it in and lightly greased it.

Mix the flour (and cocoa if using) and the bicarbonate of soda (and salt if using) together and set aside.

Cream together the butter and sugar, gradually beat in the eggs and vanilla. Fold in the dry ingredients until well mixed, finally stir in the buttons.

Tip the mix into/onto the prepared tray, stopping the mix at least 1.5 inches from the edge to allow for spread whilst cooking. Press the M&M's into the top. Bake for 35-35 minutes, until the middle is set and the edges are golden.

Allow to cool before you eat - if you can! ...don't eat it all in one go...cut into segments and share with a friend or two or three!
