Baking Day

Doing my bit for waste management and recycling today by trying to turn some seriously over ripe fruit into delicious baking. Why is nothing ever as easy as the people telling you how to live your life would have you believe? Okay so 2 weeks ago my family was consuming summer fruit like it was going out of fashion, just when i think I have supply matched with demand they decide to stop. So in line with new government guidelines to reduce waste and be creative I thought baking would be the answer. Blueberry muffins and banana cake. However, of course, although I had the fruit I didn't have buttermilk or self raising flour. A bit of internet surfing and the mixing of plain flour and baking powder and milk and lemon juice and I had everything I needed, mixed in with a few things I didn't. The mashed bananas were particularly troublesome, they now contain a 3 year old sneeze (or possible the sneeze of a 3 year old) and possibly a dead wasp (a swarm of which invaded the kitchen as soon as mashing took place, sending the 3 year old screaming in terror [now hiding under cushions and whimpering at everything that looks remotely insecty]) but if you wont tell neither will I. I've just tried one of the muffins - it tasted terrible, maybe it was the out of date wholemeal flour I used (flour is heavy rubbish!), maybe I just dont like muffins. Either way 3 year old has already refused to eat them so unless husband decides to take the plunge I ave embarked on another futile "green" excercise which has probably taken the planet a little closer to it's moment of doom (you know all the gas, the extra strain on the dishwasher, a 3 year old destined for a life of insceticide). Every little things helps!......
